As he was frying latkes in Malaysian palm fruit oil, Chef Viverito addressed concerns of cooking with oil by citing some impressive stats. Malaysian palm fruit oil is naturally trans-fat free. It has a fat balance that does not raise cholesterol levels. Bonus: it can cook in very high heat, unlike olive oil.
