If you’re bored with making banana bread, and banana smoothies no longer float your boat, it’s time for some new uses for that overripe fruit sitting on your counter. Inspired by the exotic Southeast Asian country, these easy-to-make Malaysian desserts may be your new go-to recipes for brown bananas. Best of all, each uses simple, wholesome ingredients you should already have in your pantry.
Fried Banana Fritter (kui kodok or chokodok in Malaysia)
Peel, chop and mash three brown bananas. You can include a yellow banana, if you want a chunkier texture. Set aside. In another bowl, mix one cup of flour, two tablespoons palm or brown sugar and a dash of salt with one cup of water. Mix in the banana mixture.
Heat a frying pan to medium-hot and add enough Malaysian certified sustainable palm oil to cover the pan to a one-inch depth. Palm oil, the most popular cooking oil in Asia, is great for frying as it doesn’t break down into toxic chemicals at high heat. Dip a large spoon into the oil, and then scoop a tablespoon of the fritter mixture. Gently place the batter into the oil, and fry until brown. Flip the fritter gently to fry the other side. This slightly sweet snack is best served warm. Malaysian children often enjoy fried banana fritters as after-school snack.
Bananas in Coconut Milk
Peel and chop three ripe bananas. Mix one can (14 ounces) of coconut milk with three tablespoons of sugar, one teaspoon of vanilla and a pinch of salt. Bring to a simmer on medium heat, stirring regularly. Add bananas and simmer for 10 minutes. Serve warm. For a less sweetness, consider making these with under-ripe bananas. In Malaysia, it’s often served with floating ice cubes for a refreshing dessert.
