Houston may be in the Gulf Coast area, but that doesn’t mean these Texans all know how easy it is to prepare seafood. In an article for “Houston Family Magazine,” Functional Chef Gerard Viverito recommended eating more sustainable seafood, one of his go-to meals when he feels stressed and wants to improve his mood. Because he suggests a simple way to prepare seafood at high heat, he also educated readers on using the right cooking oil. “Some oils become carcinogenic at high heat. Malaysian palm oil is ideal for fish because it has a neutral, buttery flavor. Plus it’s heart-healthy, nutritious and certified sustainable.”
